Chicha de Piña

This spiced pineapple drink is refreshing and very easy to prepare! There are different variations from Guatemala to El Salvador, yet each is similar and delicious. It can be served hot or cold.

1 pineapple

4 quarts of water

1 cinnamon stick

2 cloves

2 black peppercorns

Panela, agave, honey or sugar to taste

Fill a large pot with the water.
Scrub the pineapple with the rind still intact to remove dirt and debris. Then cut the rind from the fruit and place in the pot of water. Reserve the fruit. Add the cinnamon stick, cloves and peppercorns and bring to a boil. Reduce heat, and simmer for about 30 minutes.
Add your sweetener of choice or drink as is.
Drink immediately or cool and serve with ice.

You can make fruity popsicles by adding fruit to the spiced drink and freezing in popsicle molds.

Note:

Panela – unrefined whole cane sugar – is the traditional sweetener used in Latin American countries.
