This classic pesto sauce is a crowd pleaser. It’s quick and easy to prepare and can be served hot or cold. For best results, use fresh basil leaves, pine nuts and quality, aged cheeses.
1 bunch basil leaves
1/2 cup of olive oil
1/4 cup pine nuts
1 cup freshly grated Parmesan cheese
2/3 cup freshly grated Pecorino Romano cheese
1/4 teaspoon salt or to taste
1 tablespoon softened quality butter
In a food processor, combine basil leaves, olive oil, pine nuts and salt. Blend until combined. Add the cheeses and butter and process until well blended. Additional olive oil may be added as necessary. Serve with pasta, use on salads and sandwiches. Freezes well.
