In the summer vegetables are fresh and it’s fun to eat them raw, especially when it’s hot outside. But here’s a twist to keep your kids eating their veggies. You can try this with other vegetables such as broccoli, cauliflower, etc.

French Fried Haricots Verts   – haricots vertsserves 4

  • 1 pound fresh haricots verts (French green beans)
  • olive oil
  • salt and pepper to taste

Preheat the oven to 475 degrees.

Wash the haricots verts and trim the ends. Place in a bowl and drizzle with olive oil until just coated. Sprinkle with salt and pepper to taste. Place on a baking sheet and bake for about 10 minutes or until crispy. You can add a little Parmesan cheese just at the end of the cooking for a different taste.
