This has to be the most simple and delicious dinner of all time!

Roasted Chicken:

Preheat oven to 450 degrees

  • 5 pound whole chicken
  • 1 onion
  • 1 carrot
  • 1 lemon
  • Kosher salt
  • olive oil

Remove the giblets from the chicken. Thoroughly rinse the chicken both inside and out, then pat dry with paper towels. (this will ensure a crispy, golden skin) Place the bird in roasting pan, breast side up.

Coarsely chop the onion and carrot and halve the lemon. Stuff the 3 ingredients into the cavity of the bird. Liberally salt the chicken and drizzle very lightly with olive oil – about 1 tablespoon.

Place the chicken in the oven and cook at 450 for 15 minutes. Then reduce the oven heat to 375 and cook for about 1 hour and 15 minutes. The total time should take about 1 1/2 hours or until the juices run clear when the chicken is cut.
